Wedding Cake Recipe
Easy and SO tasty!
Here's a fabulous wedding cake recipe for carrot cake that all your guests will love.
(Makes a 9" round cake)
- 2 cups castor sugar
- 2 cups plain flour
- 3 cups grated carrots
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate soda
- 2 teaspoons cinnamon powder
- 4 eggs
- 1 cup olive oil
How to make Carrot Cake
1 Pre-heat your oven to 180°C
2 Put all ingredients in a large bowl and beat well
3 Bake in a lined cake tin for 45 minutes.
4 For topping, mix 50g margarine with icing sugar, lemon juice and philladelphia cheese
5 Grate lemon rind on top for added zest!
NB: You can put icing or white frosting on top of your carrot cake if you prefer but this will
make the cake far more fattening.
Of course, carrot cake is a healthy option compared to lots of other rich patisseries.
It is relatively low in sugar, has oh so good for you olive oil and our lemon cheese topping
can be made virtually sugar free if necessary.
